You could tell her that you've decided to be a vegetarian and you don't hate her food(if you don't) but you just want to take a healthy choice in food. I personally think that's smart that you chose to be a vegetarian. Not the best advice but I hope this helped you a bit..

Just be completely open about it. Tell her that you'd like to be one and your reasons why like if you feel it's wrong to kill animals. Then just see where it leads. What's the worst she can do? I don't think shed force you to eat meat or starve you if you don't.
I wish I could tell you how my mom found out. But I don't remember it, since it was 10 years ago.

Just be open and honest about it. Don't get agitated or angry if you sense that she thinks you're just going through a phase, because that'll make her think her theory is right.
Just tell her calmly and go from there. You're serious about it, no one else can tell you how to feel about it. So go for it :)
