View Full Version : Making desserts from scratch? Problems?

I've made brownies, red velvet cake and cookies from scratch. But with the Cake and Cookies I've started noticing some of the ingrediants are more apparent than others.

The cake for example, the actual cake was ok, but the frosting we made for it tasted heavily of vanilla. I tried lowering the vanilla but it came out to thick. Is they're something I can use to mask the vanilla? Would a slight hint of lemon flavoring be okay? (Bf's family recipe)

The cookies call for salt, but I can always taste the salt in them and it's weird. I've again, tried lowering the salt but they don't taste right like that. I follow the Nestlie Tollhouse recipe on the back of the Semi-sweet chocolate chips.

I've considered adding ingrediants to mask the flavor of both. For the cookies I was thinking about chocolate frosting or something like you would put on sugar cookies but I don't know if that would be any good?


I'm not an ameture at cooking, I've been cooking since I was very young (My dad's a chef), and I've taken numerous classes. But I don't know how to fix these problems without masking them.:what:
Any advice?

Oh cool me too i cant cook anything but desserts so heres what i do. The best thing would be to expirement. For example the cookies. Dont add too much salt maybe just a sprinkle, maybe use more dough and make more cookies to distribute the salt in smaller anounts or add more of the flavoring or topings for the cookies. As to the cake frosting maybe you would want to find a weaker altetnative. Maybe you can use powdered vanilla extract. Remember that it all comes with expirementing and dont give up. Not everyone can create a perfect cake from scratch.

Frosting usually comes out more thick if you whip it too much. Try not to do that. :P

Salt is salt. What can I say? Hahaha. I dunno how to help you with that one hun...

Be creative and try things out. That's the whole point behind being a chef! :D good luck hun. ^_^

do what you feel is right, personaly i never make vanilla icing, so i dont have that problem, try not to whisk it too much and maybe lower the amount alittle, if your using vanilla pods, it willbe easier to regulate, if your using essence, try only a small amount.

with the cookies, try only a little salt and maybe some more sugar?

experament, try things out! the best recipies dont come from books, they come from your mind :)

Those are all good ideas. I think I'll switch frosting recipes to get rid of the vanilla. I hate vanilla. The taste, the smell, it's all nasty. =p

As for the cookies, idk maybe I should try another recipe? Maybe it's just the recipe i'm following. Ooh I could make peanut butter cookies this time! =D

wow that sucks i love making desserts but I cant find the right red velvet recipe ik what im doing but not everyone has or will share the good recipes

Everybody has a sweet tooth and love dessert. Have you heard of no bake desserts such as tiramisu. The ingredients are just fruit cocktail, all purpose cream and graham crackers. You mix them I guess on a container then let it freeze for a while.
