My mom and myself are very strict healthy eaters - all organic, all family farmed, no antibiotics, and tons of veggies. This health kick of hers started about 4 years ago and soon I hopped on board out of coercion, but soon become a healthy junky myself. I watched the films, "supersize me," "Food inc." and read "Eating Animals" by John safran.
I can't even begin to tell you how much my life has improved both physically and mentally from dietary changes alone (along with supplement additions like fish oil and vitamin D.) I'm curious to know if any of you have any inspiring stories about healthy eating and cooking and how it's affected or changed your life for the better. Please share your stories :D And any favorite health foods you like. Mine's asparagus :D OMNOMNOMNOM.

I've never been a healthy eater, but I research everything. I don't act by what I know apparently :P Yet nutrition has always been a big topic of research for me. My psychologist also got her degree in nutrition too so for months we spent at least 15 minutes a session discussing omega-3 and getting your protein as a vegetarian and such things.
I'm a vegetarian, have been since year five (fourth grade??) and ever since I saw Food Inc. I've strictly eaten organic food.
As far as changes, the only thing I've really noticed is that eating makes you feel better (as opposed to not eating). Lol.
I wouldn't be able to tell you if eating something for once or if it was the changes in food that made me feel like I do now, but either one made me feel more alive. I've started taking iron supplements too and as of my last blood test, I'm no longer anemic.

My mom goes on random organic food kicks that lasts for about 2 weeks or so, but during those times, I love it. The food is so much better, and I know its better for me, I love eating it.
During volleyball season, the whole team swears off of soda, fast food, and something else of our choice (Usually ice cream, but could be chocolate, anything really) and it's awesome. You can really tell when someone isn't sticking to the plan too, or at least hasn't been for a few days. They're sluggish on the court, and everything just seems harder. I ate fast food once last season, and that day I wanted to shoot someone because it felt like I ate a rock.

we just eat more veggies....don't cook anything in deep fry...nothing too salty...we aren't going to any more restaurants because of my mom's health.

Ditto.
I try to eat things that are high in fiber since it's good for people with Bipolar Disorder. I also take omega-3 for brain benefits and niacin for circulation every day.
Veggies, fruit, fish and nuts make up the majority of what I eat. After doing that for a while, you can definitely tell just how negatively junk food weighs on you. Every time I eat junk food anymore, it makes me sick.
