I was just wondering if pages that Google 'Cache' ever actually go away. Do they update or something or what...?

The cache updates every time the Google crawler visits the site. That could be every week, or several times a day, depending on the site's traffic.
If the crawler cannot load the site, the cache remains the same.
If data is removed from a page and the crawler can visit the site, that data won't appear any more in the cache.
But if a site is taken down, or an address is removed (domain.com/x is removed, but domain.com/z remains) the cache remains.

The same rules apply to the Bing cache, the Yahoo! cache, the Ask cache, and so on.

Hmm... Well I'm asking because when I search my YouTube username some of my posts on here come up. I've taken the link and image out of my signature but it still comes up when I search; so will that go away eventually?

It should, yes. Next time the crawler archives/caches those pages.
