Help with my GF

How do I nicely tell her she's getting chubby and to stop eating so much? She has been getting bigger around the waist and I don't quite like it...
I just don't want to make her mad.

You could casually bring up diets,
Or how someone you see on tv looks fat, something like that.
Take her out to eat healthy food, and tell her about the health benefits of eating healthy and how good it is for your heart blah blah blah.
But don't just straight up bring up the topic, casually slide into it.
If it doesn't work, and she doesn't realize what your getting at, then you can just tell her straight up, because obviously she should know you love her,
