Basically none. Straight, bi, gay, work like this:

If you're purely attracted to only the opposite sex, you're straight.
If you're purely attracted to only the same sex, you're straight.
If you're attracted to both, even if one is only a little tiny bit, you're bisexual (if one attraction dominates, you're only a little bit bisexual).

People who call themselves "straight curious" are bisexuals who, for one reason or another, don't want to use that label. Normally, it gets used in puberty, because then everyone is willing to be all "oh yeah, it's just hormones" and play along with the collective delusion that being somewhat attracted to the same sex is just incidental "curiosity" and reflects no underlying orientation.

There are some people who say they are gay curious as well, who know they're gay but have thoughts about the opposite sex too. I don't really understand it after around 25 years old myself, as most people would already be well on their own sexuality path by then, whether gay, straight or bi.

Well it's actually up to oneselves what sexuality one chooses. Some choose to distanse themselves from the whole sexuality-thing.
When It comes to curious: There's even doctors that say people can be curious..
