Since me and my girlfriend had sex, and it felt really good for both of us, she hasn't enjoyed fingering as much as she used to. Could it be just compared to how good sex felt for her, or is she losing her sensitivity? Have I stretched her, or just she doesn't enjoy a smaller finger compared to a bigger penis?

To be honest she should be able to answer those questions much better than we can, you should talk to her more openly about it. Once you're into a sexual relationship fingering would usually be regarded as foreplay and might just leave her frustrated if thats as far as it goes.
