Enchiladas, man. That's the shit. Probably my favorite food next to my moms spaghetti.

When I'm crammed with work, my father cooks as usual or we just buy something pre-made (my mother works late and isn't a great cook). Whenever we eat, it's always a multi-course meal, so if I cook, depending on the time I have, I'll make a home-made cake or other dessert first (cooks the longest), then some sort of salad with home-made or bottled dressing, usually with fresh hot garlic bread. Next is some kind of vegetables and/or starch so it's usually not terribly exciting. The main course is where it gets exciting and depending on the size of it, the entree is gone.

Usually my father complains about one constant thing and that is I use a lot more oil and such than he does, so sometimes it's not the healthiest meal but it's tasty. For example, home-made ham burgers, 50% ground pork, 50% ground beef, little bit of finely chopped Spanish onion, fresh garden herbs (i.e. basil when the weather is right, currently it's just store-bought stuff). Cook it inside, use enough oil to essentially deep-fry the burger patties, each of which are approx. 0.5 pound. Have home-made caesar salad on the side and if enough time, home-made onion rings, although usually it's french fries (store-bought or home-made). Dessert in this case was home-made multi-layered raspberry-chocolate-brandy cake with store-bought dutch chocolate frozen yogurt on the side. If we have, drizzle Goldshlagger ontop. Whenever I make a dessert with brandy, I put in a hell of a lot of brandy, more than a few shots of it. Add the Goldshlagger and you're off for the night, so sometimes my parents plus any guests love when I cook.

My father sometimes uses some alcohol when he cooks but it's mostly in stuff like wine for salmon or other fried fish. He doesn't do any desserts, except some ice cream or frozen yogurt store-bought mixed with some fruit.

My grandmother taught me how to cook from a pretty early age, then I worked in a few restaurants and my father taught me some other stuff too.
