Well this thread was inspired by Leighs idea but she wont mind
so if you have any healthy recipes that are easy to do please share them
EDIT:it was leighs idea about healthy food marcie thought of the crazy foods me got mixed up :D

Except my ideas weren't particularly "healthy" they were just plain bizarre.
I still stand by my Peanut Butter and Jelly Ice Cream combined with Strawberries and Vegetable Lasagne.
Not that anyone would actually eat that or anything. :razz:

PB&J ice cream and strawberries combined with veggie lasagna, Marcie? C'mon. A face like that comes up with that recipe?! Call my office, make a few appts., will ya?
Simple, healthy recipe #1, a salad.
Get a really fresh, real tomato, Maybe a couple, few, depending on the size. Splurge on the expensive tasty ones, not that plastic garbage that they gas on the way to the store and hope you don't notice are utterly tasteless and useless.
Then get a bunch of your favorite lettuce (I prefer escarole, it's a bit tart and very chewy, but you can use whatever, but please, no 'iceberg').
Then, get cans of chick peas, red beans, and canneloni (white beans) I prefer Goya, although Progresso is a close second (yes, there's a correlation btw'n brand and taste).
Get a head of napa cabbage, and if you're adventurous, a head of Bok Choy.
Get some scallions.
Wash everything, add contents in a bowl. Add as much of the beans you want, but wash them off first (they pack them with *stuff* that changes the taste).
In a seperate cup, add some extra virgin olive oil (Greek if you can find it, Sicilian otherwise, make sure it says 'Produce of Italy' on it, NOT 'Packed in Italy', b/c that means its from *elsewhere*).
Add a touch of oregano, garlic powder, onion powder, and pepper. Add some balsamic vinegar. Stir.
Add mixture to salad, put top on to toss generously.
Yum!
Salads are great, they are loaded with good nutrients, as are the beans, which are very filling.

Wow Marcie.. I've said it before but that sounds interesting/tasty.
So as promised Here's some of my healthy recipes. I have more but at the moment I can't be bothered to type them all.
My personal favourite Stir fry:
Egg noodles
Red Peppers
Brocolli
Cabbage
Aubergine (Or in American Egg Plant I think)
Soy sauce
Chicken (If desired)
Cook the chicken in a wok/frying pan until lightly brown.
Then add all the Vegetables and noodles until they are soft, Add the soy sauce lightly cook and then serve :P
Apple Blueberry Pancakes
225g wholewheat flour.
1/2 tsp baking soda.
500ml apple sauce.
1/2 tsp cinnamon.
120g blueberries.
Mix the flour and baking soda. Add milk slowly stirring into a smooth consistency. Mix in the apple sauce and cinnamon. Add blueberries stir to distribute evenly. Cook in a frying pan with low calorie oil or use a non stick pan. Cook till golden.

A recipe i've played with, my family loves them, and they're about half the fat of normal Chocolate Chip Cookies. And I mean cmon! Cookies! :D Makes about 2 Dozen. Depending on how you prepare them, About 2 Dozen(24) cookies if you use a 2in ice cream scope
INGREDIENTS
* 3/4 cup packed brown sugar
* 1/4 cup white sugar
* 3 tablespoons butter
* 1/2 teaspoon vanilla extract
* 3 egg whites
* 3 tablespoons water
* 1 1/2 cups all-purpose flour
* 3/4 teaspoon baking soda
* 1/2 cup semisweet chocolate chips
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, cream the butter with the brown and white sugars. Stir in the vanilla, egg white, and water. Sift together the flour, baking soda; stir into the creamed mixture. Mix in the chocolate chips.
3. With a 2in Ice Cream scooper or regular spoon spread dough onto ungreased cookie sheets about half an inch to an inch a part. Bake for 8 to 12 minutes, or until golden brown on the bottom. Allow cookies to cool for 1 minute on baking sheets before transferring to wire racks to cool completely

i would eat it XD
i eat really spiced rice with chocolate and jelly… so why not you lasaña?

If you are referring to my post about the chocolate Chip cookies, they are a healthy"er" back drop to their normal Chocolate Chip counter parts, They have about half the fat, about 75grams per cookie and about 100 calories, I think. If i counted right.
They are not a "healthy" food, but a "healthier" alternative

Ingredients: 1 pound of boneless chicken breast, 1lbs of rice(any really), and some broccoli!
1)I would marinate the chicken breast for a couple of hours and then grill using NO OIL or BUTTER.
2) 1 cup of rice, 2 cups of water, and 1/2 teaspoon of salt. (Of course, this is way too much for me to consume in one sitting; however, leftovers are wonderful.)
3) Steam the broccoli!
Delicious!
