Given that Coheed and Cambria is terribad, I wouldn't hope much on their singer's solo project. But that's just me.
Now, for my recommendations, Paula...
Radiohead has a few nice, softer songs. Check out "Let Down" in OK Computer, for example. Hell, check out pretty much the whole album. Radiohead is one of my favourite bands. They go from soft to hard quite effortlessly, quite talented.
"Endlessly", Muse. It's in Absolution. That songs brings back unhappy memories with chicks.
"The Diary of Jane", Breaking Benjamin. The acoustic version sounds like what you're looking for. The original version, well not.
"Creep", Stone Temple Pilots, in Core. Also known as "half the man I used to be" by noobs. Scott Weiland may have been a neo David Bowie androgyne, STP is still a great band, so is Velvet Revolver.
"Black Hole Sun", Soundgarden. It's in Superunknown. Chris Cornell has the obligatory manly grunge voice, but it is as slow as Soundgarden goes, I think.
"Got Me Wrong", Alice in Chains. It's in Clerks. There's an Unplugged version if you don't like the original too much.
"Hunger Strike", Temple of the Dog, on their only album. It's Chris Cornell's side project. Me likey.
There's also an acoustic version of "Catch Without Arms", by dredg. The original song is in the eponymous album but the original doesn't fit your criterias. I think the acoustic does. I don't have it, but try it.
I may have more later if you let me go through my CD collection. I'm not a sucker for slow songs but there are a few I like (I'm a grungehead and grunge bands do a good amount of switching between angsty fasty and slower songs).

Uhmm... The softest band I know of is probably Death Cab for Cutie. I think Dashboard Confessional is, for the most part, soft?
Those aren't soft at all, those are relativly moderate rock. Try Iron and Wine, he's got great vocals and plays the guitar well.

Leaving Dramatics - Quietdrive
Might not be what you're looking for, but meh, its not a bad song... I'm usual into harder stuff, but anything by Quietdrive is pretty sexy, though not all of their songs are that "soft."

Paula, you have no idea how that sounded in my mind, but yes, I'm like you too lol. :P
I prefer hard music (for the most part), but I'll listen to soft from time to time... It usually depends on my mood. :D

Green Carnation is a progressive metal band, although they did put out a lovely accoustic album you might wanna check out. Album name is 'The Accoustic Verses', here's a sample...

HARMONIUM!
You probably won't understand the lyrics (they're all in French), but they are definitively my favourite band...and all their work is done with an acoustic guitar. Sometimes there aren't even any drums. Some is more upbeat, some is slow.
They're a symphonic rock band...EXTREMELY talented. It's a shame they didn't manage to pierce through the market.

Steve Hackett is pretty good I think. Not many songs in his catalogue that can qualify as "soft" but he does play very good guitar :).
I've heard one of his albums, "Acoustic Moods", which is pretty good. I'd recommend that.
