We started going out this summer but we decided that we wanted to be really really really good friend this school year(Not going to same school). She is like my girlfriend but not at the same time. Her birthday is on the 8th and I don't know what to get her!

Actually, Jared just moved it here and its in the perfect spot.
Anyway, just ask her what she wants for her birthday, so she doesn't get disappointed.
Or, if you want to surprise her, jewelry is always good :)

Ahh, yeah, jewelry could suggest going further...
Maybe ask around her friends and see what they are getting her?
Get an idea of what she wants from them?

Well I think she's really into sports you should get her something to do with sports, as it's something that she enjoys. As pointed out, you could always ask her, as she knows what she wants best.

Hiya Nick,
Gifts are a way you show your appreciation for the person. So, you can go 2 ways here. The first is to get her something you know she'll like, that she'd enjoy and appreciate, using your relationship as the context to figure that out.
The second way is to use the relationship (and your understanding of who she is) to get something that's symbolic, that stands for something else. So, in your case, since your first meeting way back when was when she was watching her favorite movie 'Legally Blond', you would get her something from that movie, preferably something that you know she likes or identifies with.

go online and reaserch sporting equipment, find a really cool out of the ordinary sports gift, ie light-up ball, score keeping goals/hoops. or tickets to see her favorite team play
