Well, I've been having a problem lately.
After I eat, I feel that I have to go to the bathroom right away. Of course, the food is digested and all but even after I do defacate I still feel like there is more. Does anyone know what this could possibly be?

Could be a problem with your diet, an imbalance of nutrients can mess up your bowl sometimes.
Could also be another problem with your bowel, completely unrelated to food. Best thing to do is go to your doctor, they can give a lot more accurate diagnosis.

My guess is that you have a very fast metabolism and that once your stomach is full from your meal that things that were backed up in your colon suddenly gets pushed down to your rectum as a result of your recent meal. Never stop yourself from having a bowel movement as you don't want to have your stool end up getting impacted or hardened.
As for the feeling that you have not completely emptied out your bowels, sometimes little things like hemmhroids could be the root of the problem. Some hemmhroids are fluid filled sacs within the rectum that get forced out during a bowel movement. However, once you are done the fluid filled sac works its way back into your rectum due to it being connected to some tissue there thus causing your feeling that you did not completely empty out your bowels.
In the end of the day, if your problems are really becoming a major issue, then talk with your healthcare provider too see what he/she thinks your issue is.

Charlie, I think the problem might be constipation. If it's hard, then it's not moving thru you as quickly and easily as it otherwise would. So, there'd be that 'full' feeling. I doubt your need to go is related to just eating, as it takes a while for things to get digested and pass thru you. Rather, I suspect it's the food itself that puts pressure on your digestive tract, so it moves things along that have been there for a while from your last meal.
Try drinking more H2O thru the day and eat more fiber, things like fruits, whole grains, dried fruits, that should get things miving more regularly and completely.
