Girl stares and glances at me a week after finding out she sees me as just a friend.

In the title...

I texted the girl I like (thinking I won't see her anymore) telling her how I feel. She responded telling me she sees me as a friend, which I'm fine with.

But she seems interested in me still. When we met in a group and drove from one place to another to still meet in the group. We both stopped at the same stop lights (her car was next to mine). I knew she stopped next to my car and didn't bother looking. But I felt like someone was staring at me. I looked in the direction and saw this girl looking directly at me and she didn't look away for a while.

Another time, I was behind her at a distance and looked in her direction she then looked over her shoulder and looked at me quickly. The next I looked at her (a little after this happened) I saw her look sad and regretful/guilty about something. The reason I feel this could mean something is she looked at me before having a sad, regretful look on her face.

I would not care about this girl but given all this happened, it's made me confused if she sees me as a friend or more. I also know she is shy and never had a boyfriend. What do you think, she still sees me as a friend or she is regretting lying to me saying she sees me as a friend when she sees me as more.

If she says she sees you as a friend, then she sees you as a friend. I wouldn't try to force a meaning out of something that isn't very clear yet. Sure all of these body language signs could mean something, but we can't be sure yet. You'd have to talk to her a bit more to see if there are anymore signs. For now though, I think it's pretty unclear on how she feels about you, and all we really have to work with is some vague body language assumptions and her saying that she wants to only be your friend and nothing more.
