So the other day I was hanging out with friend a, friend b, and friend a's girlfriend, let's call her T. Paraphrased conversation below:

T: "hey Vocabulous, I need to ask you some questions"
Me: what's up?
T: so you know my friend X? I was talking to her on Monday.
Me: not even kind of.
T: well she thought you were cute and she wanted me to ask you about your hobbies, what you like, etc.
Me: ok whatever.

T proceeds to ask me stuff about me and I'm thinking like well fuck I don't want to date her, I'd much rather date this other girl. So the question is how do I, if I have to (I have no illusions that she will automatically ask me out), reject her kindly without appearing to be the heartless piece of shit I usually am?

What rejection? All you're doing is mentioning petty pop culture details about yourself to a friend of hers. If it gets to the point of you meeting her and it goes to a deeper level, don't doubt yourself. She might be nice and you could develop something with her. Or you could just decide not to go through with this for whatever reason, it's your body and you don't have to get involved. Just don't stay in contact with her if things don't go good.

maybe you should actually meet her before you just reject her? but if you do not want to, politely say something like : "you seem like such a sweet girl, but I am interested in someone else at the moment."

polite, but honest

This. Even if she still gets visibly upset, it happens. You tried your best to let her down gently.
