This question is twofold and mostly aimed at girls, but feel free to give your input regardless.

Firstly, Do girls say things like "you are so adorable", "you're so cute", etc. just to be nice? I am pretty bad at subtlety, so I don't know how to respond other than smile and say something stupid.

Secondly, do girls pick up on light flirting or do they expect you to be really straightforward? I am pretty shy so it's hard for me to be really blunt.

When people tell me I'm cute (which admittedly doesn't happen very often) or so on, I just take it as flirting, because I figure may as well try, better to try than to miss an opportunity. I to find it hard to tell so I just go with it.

I'm not a girl, but I like guys sooo. I'm answering. I never pick up on light flirting, I always miss it, often when people ask me where I've been I say "orgy", so I'm kinda not used to little hints. So basically unless it's a landing strip going directly to your crotch or chest I'll miss the hint.

I wouldn't call a guy cute unless I was flirting with him or he looked like a puppy. I can pick up on some flirting, but it really just varies from girl to girl. However, I think being straightforward is best because it just saves a lot of confusion and wondering. Confidence is key!

If she seriously called you cute then yes she does think you're cute, but I tend to be super sarcastic say things like "you think you're cute, don't you?", in that case I do not believe you're cute, I think you're being an ass. But if she's serious about it, she means it. As for picking up subtly, girls pick up on things that aren't even there half the time, and if she's interested I'm you all her friends will know in 0.7 seconds. Being straightforward is really nice because it leaves nothing to question, but only do it of you know eachother well and are good at it because the last thing you want to do is scare a girl off by being too blunt. But unless you're and awkward or caveman or both (no offense if you happen to be an awkward caveman), you'll be fine.
