Why do I keep getting notifications for non-existing quotes? It says a member quoted me in a post, but they never did.

This has happened to me, someone quoted me and I got a notification, but there post was deleted for containing homophobic material, but I still got the notoification.

I forget what the thread was actually about, but the post was probably deleted, I'm assuming.

Likely. Sometimes mods do catch things rather quickly.

Yeah, I'd have to assume it was for a deleted post- I feel like I know what you're talking about, and when it happened to me, it was definitely on threads where the user had their posts deleted.
