There is a race track only 20 mins from where I live, and they host "track days". For those of you who don't know. A track day is a day where you can just bring your bike and race other people, you pay £50 (about $75) and you get to spend your hole day just having fun and racing.

It seems like a good idea, not now, I've only just got onto the road. But in a few months once I've got some confidence I may have a crack at a track day and see how it goes.

All I need is a second bike, the one I have now is a cruiser. Not exactly a speed demon... I am thinking about buying a second hand sport bike and declaring it off the road. So if I only I use it for track days I wouldn't need insurance, mot, tax. It would just be the cost of fuel and parts (I do work myself).
Also since the track is private property I will be able to ride any CC I want without worrying about the law.

So I'm looking for a decent 500-600CC sport bike, nothing super flashy because I will likely lay it down on day one. I just want a decent bike. I was thinking about a CBR 600, they are very good, and not too expensive. But I want some suggestions, anyone know of a good bike that meets my criteria?

Sorry, I don't know modern bikes. Sounds like fun, though. Not many bikes where I am. I can't speak to that at all.
