Okay, so I know that vegetarianism is rather rare since even though many families have a meatless meal or more a week it is not consistant. How are you as a vegetarian? Do some question why? Do you find yourself getting the loving plate of food from your family only to scoop out the meat and anything else you don't want? Most of us have the loving family that enjoys a meal every so often made by hand only to hear the meal isn't vegtarian. I've been considering the switch to vegetarianism as has my mother but here lately healthier choices and produce is so high that a grocery list of more meat and less vegetarian. Maybe it's my area? Now I know that as a vegetarian and especially as a vegan one must consider nutrients, protein, certain vitamins, and more. What recipes do you enjoy? Added note: I get some people are overbearing with diet but why are so many offended when you say "Oh, no thank you, I don't eat meat." I mean thank you for the meal you made from scratch but I don't eat meat (when I can). I was raised with, "eat what's set before you." And since I am novice cook and a person without a paycheck and guide to proper vegetarianism I may have a while before going to vegetarianism.

Vegetarianism is much easier when the food is home-made, since most restaurants include meat in all their meals (even though you could ask to remove). Simply removing meat from a dish is not a good experience, the meat does leave its taste on the food.
Nutritionally, it isn't hard at all to be a vegetarian. Lentils, dairy, egg and split peas are your best friends! I enjoy lentil "burgers" (I don't eat them like burgers at all :P), pancakes and stuffed pepper, all very nutritious. Make the "burgers" thin and big and eat with some salad, egg, cheese and/or rice and beans!
I guess I'm in an opposite situation, I am generally a vegetarian but now I have to "eat what's set before you." Living in a frat, what's on the table is what I'm eating. While I enjoy few types of meat, I opt for the vegetarian option when possible.
Good luck! :)

I understand why sometimes you must eat what is set before you. I mean imagine having kids who keep refusing your food that you paid for and cooked? I can keep that in mind. It will be hard to abandon all meat because let's be honest it can smell and taste good. I will see what I can do. Here in south Texas healthier food is so high! A grocery list of no meat can be higher than one with a balance of meat and vegies! But I will try. At restaurants or on a cruise with free lobster I abandon my vegetarianism. Why? 8 don't get to enjoy gourmet or high dollar food often and I sometimes am in the need for meat. So I am not a true vegetarian. I can't switch yet since I must eat what is set before me given that I live with my mom and money is tight. Also, are lentils tasty, useful, and do they last?

Lentils, like other legumes, are usually cheap and very versatile, you can use them in nearly any recipe. They do not have a very strong taste, however, so I would not suggest eating pure lentils, e.g. lentil soup.

My cousin's wife Amber actually does a pretty popular vegan cooking site. I don't do it myself but from reviews of others, it's a pretty good place to start with a vegan lifestyle.

I guess now you start - you can experiement and learn make all the mistakes and then when you have the pay check and your own place - job done you can cook.
You could even try working thru a few recipes then cook dinner for your Mom -
Think about growing veg or salad things even herbs -
