As my dad and I are people of few words, there isn't much to talk about over Skype so we catch up with each other by playing video games, although we often have trouble finding a game we're both willing to play. As we were just raided and murdered in our recent gaming endeavor, we yet again need to find a casual multiplayer game we can play, preferably without having to set up a server. FTP would be best but we don't mind something on the cheap side. We're usually into RPGs, but anything works except for FPS. Could I get some suggestions? :)

I would say Minecraft if you didn't need servers but that's mainly because it's all I play. :3

Path Of Exile or Planetside 2 are decent FTP games.
If you want to spend money Terraria is great for 2 people.
Hard to suggest a game when you don't say what you and your dad like.

AQW!!! :D
I've actually heard from all the new people who try it out that it sucks. But I've been playing since beta though(not on the same character, so my main account sadly doesn't have the beta char badge.) and love it. It's rated 10+, but has a very unique MontyPythonisque sense of humor, and the staff is very involved with the playerbase. I actually spoke to Artix and Cysero(the creators of the game) in the game once.I informed Cysero about how I invented the word Blurgitty, and he said it was an honor to meet me. I think I still have the screenshot somewhere. We /dance2ed like there was no fucking tomorrow. Lol.
It's updated weekly. Not just like patches or bug fixes, but actual new playable content every friday. It's set in the world of lore, and you play "the hero". The graphics are nice, they give it a very fun, silly hue a lot of the time while leaving room for serious moments. The game has all sorts of inside jokes for dedicated fans and occasionally breaks the fourth wall. Sadly I can't play at the moment because my home wifis down. I miss it. Here's my character page.

Smite, Warframe, Dota 2, LoL, Magicka, Frozen Synapse, Left 4 Dead, Path of Exile, Neverwinter, Realm of the Mad God, Loadout, Dungeon Defenders, Orcs Must Die, Monaca, Trine, God Mode etc etc.
Literally just search through Steam and you're likely to find a metric ton of games you guys could play together.

Almost all the FPS
She literally said anything except FPS.
@OP:
There are two things that multiplayer can split on, co-op and competitive.
If you want co-op try Castle Crashers, Splinter Cell Conviction, Portal 2, and Guild Wars 2. You might also want to check this link out (http://www.gamesradar.com/best-co-op-games/).
If you want competitive multiplayer check out Frozen Synapse (PC/Mac only, comes in packs of two so you won't have to worry about buying it twice), Hearthstone (card game, free), any FIFA game, Forza or Need for Speed games (racing), and last but not least, any SoulCalibur or Tekken game (fighting).
If you want the ability to do both co-op and competition you might wanna try out Starcraft II if you want a strategy game, and most MMO's can serve that purpose as well. Rust can also be an interesting prospect, so can Dungeonland. Two Worlds II also has an interesting multiplayer mode, but analyze the game well first since it is not something everyone can be pleased with.
