Is evil ignorant of its evil or fully aware of its misdeeds and therefore evil?

Evil requires acknowledge of the misdeeds and misfortunes you inflict. Some may try to hide that, pretend that they are ignorant of it or that the results weren't like they thought, but truly evil people know what suffering they have wrought, and they revel in it. Evil does not spawn from action, evil spawns from intentions, intentions of hate, and those intentions then result in evil actions.

Evil is a very subjective concept. Like many other things everyone as their own definition of what evil is. Something you find evil, I may not.

I think that it depends on the situation, this isn't a one solution fits all problems question. Did Hitler think he was evil? Not to defend him, but I think he was just taking back what he believed to be Germany's. When someone gets mad and kills their girlfriend in a fit of rage, they usually know what they did was wrong.

To bring religion into it, are demons evil or are they just twisted, corrupt spirits? Personally, I think they are just twisted into a different psychological reality.

Every villain in his mind is a hero. Being evil is very subjective and really depends on the person not much else. Even in religion it is very subjective based on your religion what Christmas believe is evil Hindus could believe is fine.
