Hey i was just wondering if when you change your interested in on Facebook if it tells every one or not. I'm out the the majority of my friends but there are a few people whom i have not talked about it with yet like grandparents and people from school. also my friend wanted to know.

it posts a notice on your wall, and your friends can see it, but you can hide it in your history

Certainly it posts a notice but you may hide it

If it does, there is always the option to remove stuff from your wall.

I know it goes on your wall because at the time I put it I was still hiding my feelings and I put that I'm interested in both women and men. When people mentioned it I said "Well... I do talk to both women and men" then they told me what it meant and I was embarassed so I temporarily changed it back and now my Facebook reveals I am interested in both women and men (Shame I can't put that I'm more interested in guys though without taking women off this) because I have told people my feelings and surprisingly they all understand.. because they weren't surprised when I told them.
In other words, Facebook tells people (from my experiences also)

I was wondering about this too, as I was planning on filling in mine. As far as I'm aware, you can hide it, but I've never seen when a friend changed their 'interested in' so I don't think it would be a very prominent post in news feeds anyway.

You can make something you post only visible to certain people

When you edit your interested in section there is a little drop down menu thing next to it that lets you choose who in your friends can see it. You could select custom and enter names that you don't want the information to be shared with, or enter names that you do want it to be shared with. Also I'm pretty sure it doesn't actually make a post on your timeline. I recently changed my religious and political views (which are in the same section as 'Interested In') and it didn't make a post or show in my activity.
