Since I'm not actually Irish, but most of my family are, this may not be the best, but my grandparents like it anyway.

I don't know much about cuisine really :/ , but you can try making a stew of potatoes, beef (or lamb), carrots, onions, and assorted added spices and the like. Hope this helps: https://en.wikipedia.org/wiki/Irish_stew .

Stew would be a good one. Potatoes have to be involved somewhere. Cottage Pie or Shephards pie is also nice.
