I make cupcakes and sponges using this recipe:
For 8 cupcakes:
4oz Self-raising flour
4oz Unsalted butter
4oz Caster sugar
2 large eggs
It is commonly called "Four, four, four and two" as an easy way of remembering it. You can of course add vanilla or chocolate or lemon to give it flavour.
Does anyone else use the same recipe/system?
