Could someone who has/ is doing A-level maths explain to me what fills the syllabus? Is it like algebra, calculus or graphs? I've heard quite a lot is theory?

I am in the USA so I have no idea. Calculus combines graphs, algebra, trig, geometry,... basically everything.

I have no idea what it would be for you, but I'm in the enriched stream where I live, which I guess is kind of the same thing.

Basically in my course, there is way more freedom with homework. My teacher bombards us with hundreds of handouts but doesn't care if we do them or not, he doesn't check, they are just if we want extra practice. So, basically, there is a lot of freedom, but if you don't do at least some of the practice, you won't do well.

Other then that, we do extra math "contests" (competitions) that are distributed around many schools around the country, which is part of the course requirement. We also have an enriched exam on top of the ministry ones.
In class, we do everything. Functions, Algebra, Calculus, and a lot of what we do is taken from first college level textbooks. So, it's fairly advanced.

I've been in the enriched stream since the beginning of high school, and in all of that time we haven't done any math theory or history. We just learn formulas and how to apply them in situations, as well as working on using logic to break down problems and use different methods to solve them.

I hope I helped at least a little, but I can't say anything for sure about A level math in your area, just share my experience.
