Does anyone know any good YouTube to iTunes converters (or whatever you call it) that I don't have to download. Could you also give a quick guide on what to do on it.

None if them are "good" per see, as they don't give anywhere close to the quality of an MP3, and much less an AAC.
But to answer your question, I think the first one on a Google search will work, and using FileFactory to convert it to AAC or FLAC can get it into iTunes if I'm correct.
MP3s should work on iTunes though, right?

It's a download, but I've used DVDVideoSoft for a couple years and am pretty satisfied. Of course, the quality of the mp3 is going to rely on the quality of the youtube video, but find a good quality youtube video and it does a great job, especially for freeware.

It depends on the rights of the video. If it's copyrighted work, then yes it'd be illegal, but if the video is either in the public domain or has an attribution license (http://creativecommons.org/licenses/by/3.0/us/)then it would be okay in most cases.

I use video 2 mp3...something along the lines of that. Copy and paste the YouTube link, download it, and drag it into iTunes

DETURL is good, just add the youtube link after deturl.com (ex. deturl.com/http://www.youtube.com/watch?v=000000000)

I've been using AppGeeker video converter, works well on my computer.
It can download videos off YouTube and convert to iTunes compatible file format.

I generally get a HD video version of a song, put it into Sony Vegas and remove the video from it, then render it in MP3 at the highest bitrate :P
