So when I try to update Quicktime through Apple Software Update to 7.7.4, it says that it can't find "Quicktime.msi". What can I do about this? Do I have to uninstall it and do a full download and install?

Odds are more than likely that the file is missing by means which I don't know about. Quickest way looks like uninstalling QuickTime and reinstalling it. This should help with that process.
