I would like to see a quick option to sort threads by age. I think it would be pretty helpful. The way you have it set up sorts the threads by when something was last posted

That is how it's set up now, by default.
Aside from stickies, the first thread that you see on a forum is the newest, and the last is the oldest

That image shows how thread are sorted - The little down arrow next to "Last Post" means I'm viewing the threads newest to oldest by last post. If I click on last post, that arrow flips up, and I'll view the oldest threads first. If you wanted to view the threads by the starter or thread name, you'd just click on those options instead. The default is by date of last post, newest to oldest. I don't believe there's a way to change that
Edit; oh, I missread what you said .

You can change the settings here.
I don't see why you'd want to do this though, as some threads from 2011 could theoretically be relevant, as they've been posted in without disobeying the bump rule. It's really best to have it newest to oldest by last post, because that's really what matters most - the last post.

At the bottom of every forum index, there are options labeled with "sort order" and "sort by".
Use those.
