Anyone here listens to music that only has the instruments playing and not that many words. Something like Beethoven or Shiro Sagisu? My favorite composer is Yuki Kajiura

You mean music without vocals? Ha, there is a literally a tone of 'em.
Isn't that dude from Bleach? I like that guitar flute stuff he does.
If you like Japanese stuff, you can try the Yoshida brothers.
And don't miss out on this. Traditional rendition of a popular song.

I listen to a lot of soundtracks from video games, but I generally don't like the traditional composers like Mozart.

I listen to a bunch of instrumental soundtracks. The Saint Seiya soundtrack being my personal favourite.
I also love the sountracks of the Silent Hill games, Mass Effect 3, The Battle for Wesnoth, Deus Ex: Human Revolution, Star Wars: Knights of the Old Republic, and more.
I personally think instrumentals can transmit more emotions, and some do it very well. Seiji Yokoyama, Akira Yamaoka, and Sam Hulick are excellent composers.

Same here. Some of the times to me the instruments speak louder then words.

If anyone likes video game music, Touhou Project provides all you want, with a plethora of OST's and even more remixes by various artists [Demetori, Sound Sepher, O-Life Japan, Aojiru, Tomoya are all great]
On the other hand, I, as a Romantic/Impressionistic pianist think that the most touching, and often haunting music is that of the impressionistic French composers.
