I wouldn't. There might be a problem you don't know about. But then again, it's your iPod to sell.

I think the term "refurbished" tends to carry a sort of air that a company has professionally solved the issue. If I were you, I'd just repair the screen and just sell it as a normal used product. A lot of people, including myself, buy warranties when purchasing most products. Especially "refurbished" ones.

I think there are options to list it manufacturer or seller (self) refurbished... or you could always just list it as used and make no mention that the screen was fixed.

Yes, but if it does show signs of wear or has anything else wrong with it, then you have to make mention of that and mention that it has been used. Unless want picky buyers complaining and demanding a refund or leaving bad feedback. If you want to go well on Ebay, you have to be honest and gain a good feedback reputation. When buyer's see that, they will be more willing to buy from you and may be willing to pay a higher price.
In my eyes, seller-refurbished and used are kind of the same things... usually when something is refurbished, it is sent back to the factory and fixed/cleaned to make it look and work as close to like-new as possible. Seller-refurbished is just fixed on your own, no guarantees how well the work was done.

For me, if the battery hasn't been replaced, I don't look at it as refurbished.

You cannot.
Refurbished means that the factory has taken the internals of a used device, cleaned it and placed it in an entirely new case and body. Fixing the screen is not refurbishing and item.
