Well for puberty, they are given to guys who haven't shown any signs of puberty in their late teens and hormone injections induce puberty.

They also work in sex-change operations. Basically, they give you estrogen for months before surgery so that guys grow breasts! Same thing for women; if given testosterone they'll start growing facial hair and their voice will most likely deepen somewhat.
