Be careful what you sign up for and give your email to. If you're wise about what sites you give your email to there shouldn't be a big spam problem. You can always have a secondary email address to sign up for stuff and use the other one for personal email so spam won't be as much of a nuisance. Although if you don't give your email to untrustworthy sites spam won't be a problem.

Like Ant said, and also mark them all as spam or phishing so they should come back again after that. I used to get about 50 spam emails a day but eventually i manages to stop them all apart from about the odd 2 or 3 a week.

The best thing is an offline client like Thunderbird. They have the best spam blocking features.
