-(is) a party animal in person?
-working at the club?

If you answered yes to any of these, then she's probably not very interested in you.
Talk to her at least anyway. See what she's like.

In a club-type environment, it usually doesn't mean anything. Girls dance with guys, and it doesn't necessarily mean that she's into you. It doesn't hurt to ask her for her number though. The worst she'll say is no. And don't take it personally if she isn't into you. I actually had something similar happen to me at a party. There was a girl grinding with me, and later I tried talking with her, but she started dancing with someone else and blew me off.

Be nice and hope for the best. Suggest going in a (mostly female) group, and generally honesty is the best policy: just say that you would like to hang out sometime.

Women are people too, and just like you if we don't want to hang out with someone then we need something pretty big to change our minds. If she does reject you, then accept it. Girls rarely play hard-to-get and a no means "no," not "try harder."

And as others said, I'm not really sure that grinding with you, or anyone in a club, shows that she wants to go out with you.
But you can't know until you ask her. And what's the worst that could happen? She says no, but you'd move on.
