Can you? I don't know, you tell me.
Have you even tried it?
Why are you so worried about it all the time, though?

I'm just paranoid, I've tried it, and it seems to work good. But I want to ask others if they trust it.

Well, if you're unsure, you could use a browser with special security features. If you know how to program, you could read the source code of a free (http://www.gnu.org/philosophy/free-sw.html) browser, such as Midori (http://twotoasts.de/index.php/midori/), Mozilla Firefox (https://www.mozilla.org/firefox), or Mozilla SeaMonkey (http://www.seamonkey-project.org/).

Agreed. Incognito provides a false sense of security. Your web history is only one of the multitudes of ways you are tracked online.
Do you know Google?
Well, collecting information is their main way of making money.
