It's just like how guys ejaculate upon orgasm. It's their ejaculatory fluid. And they shake because they just experienced a rush of pleasure.

Because we all evolved from octopus'. The fluid ejected in the squirt was once ink used to escape predators. The sexual nerve pathways are located next to the defense response mechanism in the brain, and the two fused so sexual arousal now elicits squirting instead of stress hormones. After squirting ink, octopus' make erratic movements to confuse and shake off the predator in pursuit, explaining the shaking and trembling.
