I know this isn't the typical question here, but what is your opinion on motor oils? Which is the best?
I have a 1999 Mitsubishi Eclipse Spyder (V4,non Turbo) and it'd help to know which is best for it.

It depends what you want. For any import car (or in my opinion, any vehicle at all) you want at least a semi-synthetic oil, or ideally a fully synthetic oil.
A semi-synthetic oil is a blend of conventional oil with a synthetic oil. These are generally cheaper.
If you decide to go this way, get a decent brand. ie. Castrol, AMSOIL, or Mobil.
Fully synthetic oil is more expensive, but still, fully synthetic oils will last longer, offer better protection, hold up in extreme temperatures, and provide longer oil change intervals. They're worth the extra money if you want the best protection for your engine.
So if you live in a place with extreme temperatures, this is the way to go.
Again, good brands are the way to go.
I recommend Castrol, Penrite, Mobil, AMSOIL and Red Line.
We have used Red Line before, as we have Mobil.
Currently we run Penrite in my dad's car and AMSOIL in our other cars.
Good luck!

Preferably semi/fully synthetic oil, But if you still have the manual that came with the car, the type of oil is usually listed there. If you don't, I checked for you and it turns out 10w30 is best for a '99 Eclipse :D

I think I'll end up using Mobil 1 (Fully Synthetic) along with a K&N oil filter. Thanks.

Two of the best brands to use right there man.
I'm not sure what your recommended servicing intervals are, but it's probably best to check your air filter, plugs and other liquids if you just purchased the car.

We just bought the car a month ago, and I plan on servicing everything that should be serviced, all in one shot. I replaced the stereo already. (OEM Stereos? Lulz. You serious?) 3 of the 4 windows didn't work, now only the back ones don't. I found out that both doors are missing speakers (sigh). Something was draining the battery rapidly (it'd die overnight), so I found what was causing it and pulled out the fuse for it.
Next up: Oil Change, New Air Filter, possibly new spark plugs, A/T Fluid Change, etc.

try checking your user manual for your car, and look at maintenance section, though I strongly recommend 10w30. I have a 95 cutlass ciera, although its a v6 it still takes 10w30. hopefully you got yourself squared away properly.

Be careful when you switch to synthetic, the cleaning detergents can strip away past sludge layed down by conventional oils and may cause oil leaks. Motor oil in general is a particular hobby of mine. IDK why but I just love learning about the quarts of mediums that can do soooo much to protect of beloved modes of transportation. For you I would choose a 0W-30 if you decide on a synthetic. the lower the Winter grade, the faster your oil pressure will rise, and dont worry about it being too thin. Trust me, cold oil is too thick. If you plan the convention route, I would use a 5W-30, 10W-30 is fine, but the thinner the start up grade, the faster the oil pressure risses. I use Castrol 5W-30 in my Jaguar and 10W-40 in the MG. both conventional due to their history
