So who's the guy he fights at the end of the movie? He has no face, but they mentioned he was some other character they knew early on. They took his mouth away in the movie.

Uhuh they got it right, he'll be reappearing in the next Wolverine film apparently and they're looking to create a Deadpool origins to explain his past which is quite interesting if you go by the comics.
