Ok, try spaghetti with 'shroom sauce:
1 large wok/pot to cook in
Stick of butter with a tbls of oil
3 cloves of finely grated/minced garlic
250grams thinly sliced mushrooms
2 tbls Tabasco sauce
Teaspoon of salt
4 Tbls of sour cream
Parmesan cheese to dust it with when done
1. Slice mushrooms
2. Grate the garlic
3. Melt butter and oil in the wok on low heat
4. Fry the garlic for about a minute, stirring constantly
5. Add tabasco, fry for another minute or so
6. Turn up the heat and add the mushrooms and salt. Fry until soft and juices begin to form
7. Stir in Sour cream to make a cream-coloured sauce
8. Add to cooked spaghetti and dust with parmesan.
Feeds about 3 people. Good luck:)

Just a small tip: Almost everything you ate before you became a vegetarian can be a source of food after you made the switch. Just take out the meat. Add beans or something else that seems like it would fit nicely and be on your way!
I've been vegetarian for years now and I haven't had to actually change what I eat very much. Anything short of hamburgers I can just slightly modify. Feel like having a taco dinner? Make up some beans instead of the meat that uses that.
Just make sure you get some protein somehow. Very, very important. Beans are an excellent source, as are kinds of nuts. I'd do some searching around to find sources of protein to supplement your diet and see what sparks your interest.

Dried beans and legumes(peas, lentils). 1lb. supermarket packages cost less than $1.00 and give 3-4 meals. Try adding ingrediants like garlic, onion, parsley, chili pepper, oils, tomatoes, and basil to give flavor and carrots, celery, and other fresh vegtables for sustance.
Brown rice, barley, and dried pasta all cost $1.00 or less and provide 2- 5 servings.
Tofu is less than $2.00 , provides 1-2 meals and is less costly than meat.
Fresh vegtables vary, buy what's in season and on sale. Greens(Collard, Turnip, Mustard, etc.) and cabbages cost $00.50 to $1.00 a pound. 1 bunch or head lasts 2-4 meals. Potatoes and apples are also similarly priced.
5lbs. bags of un-bleached flour and granulated sugar + vegtable oil , egg replacer(tofu is one) and soy or rice milk makes loads of cookies, cakes and pies.
Buy a soy milk maker. It's an intitial investment, like $90.00, yet it will save you a ton, as it cost like a fraction of what soy or regular milk cost at a store.

I will for sure check out the soy milk maker :D And any good recipes for tofu? I usually fry it with a couple of tiny peices of ssteak or bacon from my family ( they arent vegatarian) to give it some flavor then grill it as a "steak" with a lot of bell beppers straight on the grill too, it is amazing! and i have lost thirty pounds since i started a couple months ago

Ive been vegeterian my whole life, so I cant imagine anyones need to eat meat..
like Enbelism said, you can turn almost any meat dish to a vegetarian one be subsatuting meat for something else. You can add tofu, beans, lentils or if you want something a bit more like meat there is heaps of TVP stuff and fake meat products out there that you can use instead of the meat in the recipe...
goodluck (:

I wish I had the recipe but my aunt makes (spelling) lodo which is a sort of Indonesian curry... She's vegetarian and it's really yummy and we all enjoy it.

You can pick up some Gimme Lean soy protein and cook with it the same as you would any ground meat. It tastes a lot like meat if you ask me, actually more than I wanted it too. :P
