I take adderall for add. And I've noticed after I stopped taking it for a few days that I gained a few pounds. I didn't think anything of it. Then after 18 days with out it, I gained 13 pounds. Should I go back on it or stay off?

Amphetamine (adderall) is an appetite suppressant. Withdrawal from amphetamine therefore increases appetite. I guess that actual weight and metabolism could be controlled by the same pathway (I think it's neuropeptide related? Or perhaps norepinephrine).
Just let it go for a week or two, the withdrawal should go away. You could also go back on it at a reduced or normal dose and just remain like that for a while. If the problem is really concerning to you, see your prescribing doctor.

Is there anyway if I just kept taking it, that I could possibly built a tolerance to it? Because I wouldn't mind retaking it. The only reason I stopped was because I ran out. The only draw back is the weight gain when I stop taking it. I like how it gives me a high, and it also makes me drop pounds without trying, which I love. Is there anything else similar that doesn't starve ne but gives me a high?

You would have to talk with your doctor. That seems like a crazy side effect. Those happen sometimes. Loss of appetite, weight gain, loss of sleep etc. Most of the time they are temporary and your body does adjust to the effects, but sometimes they do get worse and it would be best to describe that sort of thing to your doctor regardless. That way he can change the dosage and other stuff like that.
