Anyone have any recommendations? Of the research I've done so far, I'm probably going to want to go with Wacom surely, right? My main use for it will be drawing, somewhere in the $100-$200 range, but I'm looking for it to be fair quality vs. price and to be compatible with Windows 7 (just in case there are some out still that aren't. :P)

in that price range you would be looking at the Wacom Bamboo, if you are looking for Wacom. Presonally i have a Wacom Intuos 4 and it is a dream to work with. Great Quality. I would suggest looking on ebay as i found mine for about $100 - $200 cheaper that the store price.

Wacom Bamboo, I have one. It's a decent size.

I have one of the cheaper Bamboo ones, which works fine with me. I don't do that much drawing with it, mainly touch-up work. If you are serious about it though, I would look at the Intuos. But no matter what, start looking at Bamboo first.

I use the magic track pad that came with my Mac for drawing apps... Although it's not made for professional work

Exactly. This is good for basic stuff, but once you enter Photoshop etc... it isn't going to do anything for you.
