Someone can fit the stereotypical gay guy and be straight as can be. There's no definite way to know that a person is gay/bi unless they tell you. There's small clues to hint of a person to possibly being gay/bi but they aren't always true.

That's a load of rubbish. You can't tell if someone's gay by which way their penis goes or their hand size, etc.
The only difference between a gay guy and a straight guy is, gays like other men, straight men like women. That is the ONLY difference between the two sexualities. Everything else is just random or a choice.
