I know of Children of Bodom, who I think are melodic death metal (I don't know about any of their recent stuff though). They've got great guitar-keyboard solos and some really good songs.
Apart from that I know a couple of instrumental / post-metal groups, like Russian Circles and Pelican.

Hold up, girl. There's no way Russian Circles is post metal. They're more post rock. I don't see why you would think that.
OP, your post is vague. If we're talking legit heavy metal, I enjoy Iron Maiden. If we're talking overall, I listen to some metalcore bands like As I Lay Dying and Rise to Remain, and some Parkway Drive. And then there's math metal, Scale the Summit, of whom I enjoy oh, so much.

I love all sorts of metal :P
I started with listening to bands like Iron Maiden and Metallica (The greatest band on the f!*&ing globe!), then I slowly moved onto more genres of Metal, starting with death metal, and bandslike Behemoth, then going onto things like Melodic metal. I really like Nightwish, I think more people should check them out ^.^
Personally, I think Heavy metal (The old stuff, 70s-80s) Is the best stuff there is. Black Sabbath, Venom, Megadeth, all awesome bands XD

As far as metal goes I find a lot of "traditional" heavy metal listenable but really the only one that I truly listen to is Black Sabbath/Ozzy.

Metalcore is not metal. No matter how many times we tell people, some people still believes that it is metal. Which is really unfortunate. Metalcore, in its essence, is not a new subgenre, but it is a serious subversions of various other genre aka shitmetal.
Plus, it's not "good ol'" -- it's a recent shit made by talentless asses, who think they are technical and rough and shit. Oh, not good Old -- but metal. Anyway, I have said what I wanted to say about Metalcore(nope, I got more to say).

I would think they were post-rock, yeah, but since I don't listen to them (and even the whole genre of metal) that much I simply accepted Wikipedia and Last.fm's label of 'post-rock / post-metal'.

The big four of Death Metal: Death, Atheist, Cannibal Corpse and Possessed.

Yeah, it is. But some bands I can listen to and enjoy. Most of the bands are straight garbage, though. Don't see how some bands are liked at all.

All of these "metals" are really quite confusing.
I'm not into the heavier side of the scale, think the heavy guitar riffs and the screaming/roaring (Roaring? Ugh, dunno what to call it), but I'm more in the middle. I can listen to just about anything that could be said Alternative Metal, Metal, Nu Metal, et cetera.

I agree with you in that heavy guitars and death growls just put me off, though do like Cradle of Filth strangely, but I absolutely cannot stand nu metal. If there's any genre I could say I hate the most... I don't know if it's the genre itself or the bands in it but I'd sooner listen to "Friday" at album-length than a Disturbed album.
Genres like symphonic, power, gothic, progressive, industrial, folk, I tend to like. Nightwish, Marilyn Manson, and Nine Inch Nails topping the list, but I've listened to a lot of different bands in the past. I hit this exclusively symphonic/power/folk metal phase around age thirteen that lasted a good couple years. Leaves' Eyes, Sonata Arctica, Edguy, Within Temptation, Epica, Sirenia, Midnattsol, Elis, The Dreamside.

Sabbath, Iron Maiden, Black Label Society, Nightwish, Sonata Artica, Northern Kings off the top of my head. iPod is full of metal though.
I highly recommend Northern Kings, four Finnish metal gods remaking 80's hits? Legendary.
