I personally have never see older man with a boner, rather it be a member of my family or not. Puberty usually subsides in your late teen or early 20's. But I suppose someone could be 25, when you become fully matured.

How do you know it was a random boner?

As age goes by, random hardons are still visible, unless they are suffering from erectile dysfunction, its just that as you grow older they are less random compared to our age.
But it does not mean it does not happen.

I agree, older men can and do get boners. I seen a few mornings of my dad in boxers def sporting a "tent" umm kinda disturbing..ya... maybe a pee hard ..not sure, definitely didn't ask.. not sure if it was "random" but hey they re guys.. I'm sure there are things that can get them riled up as well.
As for puberty until your 25... maybe but everything I have read says it ends ( usually) by the age of 21. But, I am sure that there are cases of guys that have went beyond that age
