So I'm a real chili pepper man. I've been accused by friends of putting it in everything so I'm looking for some recipes where jalapenos are actually appropriate. Can any of VTs master chefs help me out?
Also, I know this sounds stupid, but why is it that whenever I buy them they're always so much darker and wrinklier than they are in resteraunts? Is there something they do to them to get them like that?

What you mean?Because you have pickled ,dryed,and natural jalapenos.
Since there are many recipes for different I the different kinds.
Dryed Jalapenos-My friend is from Mexico says that the enchilada sauce her sucks,it's no where near theres,and a lot of them don't use tomatoes,but they use pepper
2 cups chicken stock
1/2 onion
3-4 cloves garlic
1 teaspoon cumin
1 teaspoon salt
1 bag of dried new Mexico chili peppers that have been simmered in water till softened then water drained (Remove the seeds before simmering).
Blend peppers with other ingredients until a paste is made, thin as desired.
Dip white corn tortillas in sauce and warm on griddle then roll with chicken inside (do not let the tortilla get to stiff to roll up). Top with Rancharo cheese & chopped onion. That is all my friend from Mexico does but I like to add the cheese and a little sauce to the chicken in the tortilla. My father adds sauce over the top and bakes it for a while.
I think she said you can use dried jalapenos,none the less you use pepper ^_^
and you can also try making jalapeno jelly,I've made some before and it's not to hard!

No problem my fellow cook!
My friend told me a whole lot easier version,she says let the dried peppers sit in water for a couple of hours,on a light boil,boil them,garlic, and onion(how much you want) for a hour,and then blend it!Makes a perfect enchilada sauce!
