Dry County by Bon Jovi comes to mind. It may not be the fastest solo in history but I don't think it has to be to be the best. I heard this live recently and it was definitely one of the highlights of the show.

Honestly, I think solos are just...solos. But I guess I'd probably say Maggot Brain by Funkadelic.

Nightwish in general. Emppu Vuorinen is one of my favourite guitarists, he's got some just phenomenal guitar solos.

I don't really like the band all that much, but I own Dream Theater's Systematic Chaos, and I fell in love with the guitars on the song The Ministry of Lost Souls. There's a couple really good solos in that song.

And, predictably on my part, Marilyn Manson. I have to mention Sweet Dreams and Putting Holes in Happiness.
