Voice cracking is basically the result of your voice box and vocal cords growing so fast (growth spurt) that the brain isn't used to controling how big they got. So your voice might go really high or really low in the middle of a word, even as short as "I" in "I love walnuts"

It's more like squeaking, but it's refered to ask cracking because it interupts sentences and things like that.
