Voice tone is caused by the length of the vocal cord, which lengthen during adolescence. 'Cracking' refers to the result of the elasticity of those cords, sometimes they're long and deep, other times, they're short and high pitched. With time, they lengthen consistenly, and you'll have a full 'adult voice'. until then, it 'cracks' when it changes in mid sentence.
