I've been on the following:

Qantas
Jetstar
Virgin Australia
American Airlines
United Airlines
Delta
Air New Zealand

The service on Qantas is the best of the airlines I've mentioned. From my experience Jetstar has on time running issues, but otherwise no real complaints from any of those mentioned. I flew on Air New Zealand when I was like 10yo so I don't have much memory of that either.

American Airlines - 4/5 not bad
Southwest - 0/5 would not fly Southwest even if it was the only way to escape from a zombie-infested island.

The best one in my opinion is Delta. Their service is great and their rates tend to be low. My least favorite is Sun Country. They aren't terrible but the service is lacking in comparison with Delta and they seem to have a lot of mechanical issues with their airliners. Have you ever spent the night at Minneapolis-St. Paul Intl. Airport? It sucks.

I've spent the night at McCarran and 6 hours at Phoenix In'tl. there was actually a lot to do in there, if paying $3 for a 20 oz. of soda is your thing.

First choice - 2006

I don't remember either too well other than the food on the thomsons flight was considerably worse than the first choice.I'd like to use a different airline next time though.

Easyjet were BRILLIANT for budget flights (when I went in April), simple and easy and friendly staff!

Iberia - LEBL-LEMD x3. Good service, liked it - A320
Air Nostrum (Iberia Regional) LEBZ-LEMD x6 - Quite good service - CRJ700-900-1000
easyJet - LEMD-LFPG - Tight sqeeze in the cabin, but amazing service and outstanding friendly pilots - Spent 25min chatting - A319
British Airways - LPPT-EGLL x2 - Very good Service - A320
KLM - LEMD-EHAM-LHBP - Very good service, slightly antipathetic stewards but that's fine. Super cool pilots, left me ALONE in the cockpit for 10mins. - B737-800-900
