Self-rising flour, that's the secret. 'bout 2 cups, maybe more. slosh in some cooking oil or melted butter. Two eggs if you like 'em rubbery or one if you like 'em fluffy. Enough milk to make it runny.

Oil the pan and heat it until some drops of water skittle around when you throw them in. If the pan smokes it's too hot.

Pour out the batter until it's the size of the pancake you want. Let it cook until the bubbles pop on the sirface, then turn them until the other side is brown.

Some people like 'em "moist" in the middle. I like 'em well done and a little crunchy.

Throw in half a handful of corn meal if you like that.

Mash half a banana and throw in if you like that.

It's a ritual that I make pancakes on Saturday morning for my sister and mom.

Ain't I good.....shiiiit!!
